2005 Chardonnay Reserve

Fruit picked at an average of 22.5 Brix in the first week of September. The fruit was chilled overnight after which whole clusters were transferred to the press. The first 120 Gallons of lightly pressed juice was used in making this reserve and was transferred to new French oak barrels.
Yeast CY 3079 was used and fermentation was completed in 8 days. A lactic acid bacterium was added and the wine was allowed to undergo 100% secondary fermentation.
The wine was matured sur lies with weekly stirring to develop added complexity and mouth feel.
Prior to bottling the wine was cold-stabilized and sterile filtered.
Color – golden yellow in color.
Nose – Lots of yellow fruit with vanilla undertones and subtle toasty oak.
Palate – Rich and weighty with a creamy texture. Flavors of pear and pineapple. Nice balance of acidity but more styled to a Californian Chard than a Burgundy.
