Both varietals were harvested and fermented separately. Fermentation took place in open top stainless steel tanks and was finished in 7 days, after which the wine was matured on the skins for a further 2 weeks to extract more tannins. The free run wines was drawn off and the skins transferred to press, we decided to add the press wine to the free fraction as the tannins were soft and supple and crated more body.
Both wines were matured for 22 months in new French oak barrels with a small portion in 2nd year American barrels. Blending took place after one year ageing and the blended wine was matured for a further 10 months prior to bottling. This wine was not fined or filtered prior to bottling and will produce sediment in the bottle which is totally natural.
The Heritage is a massively structured and tannic wine, meant for cellaring and consumption in 8-10 years. The aroma of the wine is quite spectacular with cedar, cigar box and Indian spices, followed by flavors of vanilla, grilled meats and dark fruits. The tannins are soft and supple, resulting in a wine that is multi layered and complex.
