Fruit for this wine comes from the front block in front of the house. It is cropped at 1.5 tons per acre and is trellised to the traditional VSP [vertical shoot position]
Hand harvest in the third week of September at 23.8 brix. The fruit was allowed to chill down overnight and immediately transferred to the press for whole cluster pressing. After gentle pressing the juice was transferred to tank for settling, which took place naturally.
Once a clarity of 180 ntu was reached [quite turbid] the juice was racked off to tank and inoculated with yeast strain VIN 13. Fermentation was competed in 19 days at an average temperature of 50 degrees with regular stirring of the yeast.
Mao-lactic fermentation was inhibited through the use of Sulfur [to retain the natural malic acid in the wine].
The wine was aged sur lies and stirred up once a week prior to bottling. After cold stabilization and bentonite addition the wine was racked off the lees and filtered through a 2 micron plate and frame filter.
The wine was not fined. After sugar trials, the wine was bottled with 1% residual sugar and sterile filtered to avoid further fermentation
Color – Pale yellow
Nose – Bright yellow fruit [pineapples and peaches] a touch of honey
Palate – An off dry wine, good acidity, very fruit forward. Cantaloupe and honeysuckle flavors Drier than the previous vintage but a lot richer and creamier in texture
Will age 1-2 years but should be enjoyed young .
