Two parcels of fruit were used for this wine, front right of the house and the bastard field. The fruit was hand harvested at an average of 24 brix and whole cluster pressed to tank. Settling was facilitated with the use of enzymes and was racked off the solids 48 hours later. Fermentation was completed in three weeks at an average temperature of 48 degrees.
The wine was racked off the gross lees and sulfured to prevent the onset of secondary fermentation. Prior to bottling, the wine was both protein and cold stabilized and filtered through a 0.45 micron plate and frame. Bottled December 17th [597 cases]
An off dry wine with aromas of peach, pineapple and orange peel. The acid is balanced by a touch of sweetness, while the palate is clean and focused. This wine is intended for early consumption but will continue to improve over the next 1-2 years.
Pair with spicy dishes or seafood.
