2009 Nektar


Winemakers Notes:

This is an ice-wine styled dessert wine made from frozen grapes. Unlike ice-wine where the fruit is harvested directly from the vine, our fruit is cold stored and frozen off-site and brought back early January. Cluster pressed for 48 hours with only 30% juice used for this wine. Juice was pumped directly to barrel and inoculated with yeast [fermentation stopped after 35 days]. The wine was racked off and sulfured to inhibit the onset of secondary fermentation. After 10 months of oak aging in new American barrels, the wine was bottled after being sterile filtered. The wine was not able to be cold-stabilized so there will be some tartrates in the neck of the bottle which are harmless.

Aromatics – White flowers, peach and honey
Palate – Not overly sweet, honeysuckle, pineapple with vanilla and coconut accents
