The aromas of the wine lean towards darker fruits, smoke oak, hints of coffee, and slight violet tones which we attribute to the unique terroir. The palate of the wine is totally seductive. The texture coats the entirety of the mouth and is both supple and silky. Maintaining a balance between acidity and oak in this Cabernet was crucial and the level that this was achieved makes this one of our most promising Cabernet Sauvignon vintages. It is a stly ethat is definitively not West Coast yet with fruit tones of the New World. It's structure on the other hand is much more in line with Old World Cabernets.
The gold ribbon Estate Reserve label is an endorsement on our part of what we believe is the best expression of a varietal that we could possible make. They are always naturally fermented and un-manipulated reflecting the character of the vineyard versus the winemaker. In terms of ageing, our reserves are designed to age and improve with time, generally requiring several years for them to reach their true potential.
The fruit for the 2014 vintage of Cabernet Sauvginon was hand-picked and immediately cooled overnight. The clusters were then de-stemmed onto a sorting table and all non-grape material (M.O.G.) was removed. We did not use the crusher for this particular lot, opting to keep as many berries intact as possible due to the high quality of harvest. The berries were then transferred to open top tanks here fermentation slowly began naturally. After a 19 day natural fermentation process the grapes were removed from the juices and pressed. The wine was aged for 22 months (as is the standard for our Cabernet Sauvignon Reserves) in 51% New French Oak and 49% third fill.
