2014 Petit Verdot
100% Petit Verdot
The nose of this Petit Verdot is dominated by toasty oak and smoke with underlying dark berries showing after some aeration. There is also a violet or lavender component, albeit pretty subtle. The tannins are quite strong but integrated well with the fruit of the wine. As with all the 2014 vintage wines, there is an inherent juciness to the wine. The finish is long which suggests this wine will be able to mature for the next 5-7 years quite easily. With aeration, the wine reveals plum and dark currants, with a hint of bitter chocolate or ganache on the finish.
After picking, the fruit was chilled overnight before being de-stemmed and sorted by hand. The clean fruit was transferred to open top tanks and chilled. The must was warmed and fermentation started naturally without the addition of yeast. During the course of fermentation the cap was punched down three times daily all the way through to fermentation being finished. At the conclusion of fermentation, the free run was transferred to tank and the skins pressed. The wine was transferred into 100% New 500L French oak barrels, Saury and Saransaud coopers and matured for 10 months prior to bottling. Secondary fermentation was completed in February. The wine was blended together one week prior to bottling and given a light filtration to remove any sediment.
The wine was bottled on August 7th 2015 with 272 cases produced.
