Brambly and earthy driven, the nose is less fruit forward and more typical of a European grape with hints of leather. This is a medium to full bodied wine with fairly grippy tannins, good acidity on the front end and a fairly long finish. The flavors lean towards more earth, leather and truffles, a definite European style of wine. This would be a perfect wine to pair with gamey dishes. With time, the tannins will soften and some secondary flavors of fruit will begin to show.
Approachable now but may be laid down for up to 5 years
Fruit for this wine was transferred to open top fermentation tanks. The wine fermented in 14 days and received daily punch downs and pump overs which facilitates color extraction. The free run was drawn off the skins immediately after fermentation with the press fraction wine kept separate. The wine was barreled down to neutral American barrels and was aged for 9 months before being racked to tank. The wine was filtered lightly to remove sediment and was bottled June 7th.
