2015 Trevillian Red
64% Cabernet Sauvignon 24% Cabernet Franc 12% Petit Verdot
Dark, inky and purple, the experience of this wine begins when you pour your first glass. There is a definite smoky edge to this wine with lots of crushed black pepper and spices on the nose. Although tight, due to its young age, once the wine is aerated it reveals the darker fruit tones of plum and currants and then continues to mature into chocolate aromas. On the palate the wine will initially present acidic flavors of pomegranate. However, the true weight of this wine sets in the mid and back palate, showing the tannic structure and complexity. The tannins are well integrated in this full bodied bordeaux blend and there is a wonderful savory element on the finish.
Drinkable now with aeration or decanting, but could easily lay down for another 5 to 7 years.
All three of these lots were processed separately from each other prior to blending. Fermentation occurred in tank which lasted from 10-14 days and received manual punch downs and pump overs. The free run was run off into tank and the press fraction added after pressing. Each wine was barreled down with secondary fermentation occurring in barrel. The wines were matured for 9 months with bi weekly stirring on the barrels [35% French 65% American, 12% New Oak only]
After careful evaluation, the wine was blended together and pre filtered to remove any un-wanted sediment and bottled June 7th.
