64% Cabernet Sauvignon 36% Cabernet Franc
The wine is a deep garnet color with wonderful clarity. The nose is quite aromatic with an abundance of cherry and pomegranate turning more towards pepper and smoke as the wine aerates. The full-bodied palate is accompanied by a good dose of acidity with suibtle oak influences. The tannins in this wine are soft and not overt, attributing to a lengthy smooth finish.
This blend will mature nicely over the next 5 to 7 years.
After destemming the fruit was crushed and juices transferred to fermentation tanks. Primary fermentation completed in 14 days with pump overs occuring twice daily. Secondary fermentation was allowed to occur naturally in barrel. The wine was then aged for 10 months in Neutral American Oak and 3rd Fill French Oak.
