Tasting Tuesday - 2017 Block 3 Cabernet Sauvignon Estate Reserve
The wine is dark and inky. The nose is quite expressive with initial tones of dark berries, lavender, violet and milk chocolate. With further aeration you get secondary aromas of mocha, toasted oak and smoke [derived from the oak].
The primary flavors are dominated by dark fruits [plum, blueberries and cassis]. What I love about this wine is the restraint and balance. There is a fair amount of grippy tannins but off set by the bright and fresh core of acidity which I believe will help this wine age and improve for a decade.
The first time ever we have made exclusively from our block 3 and thought it was good enough and different enough to stand on its own.
If possible, decant this wine for 2-3 hours prior to serving.
