2017 Cabernet Sauvignon Block 3
The wine is dark and inky showing good density and weight in the glass. The nose is quite expressive with initial tones of dark berries, lavender, violet and milk chocolate. With further aeration you get secondary aromas of mocha, toasted oak and smoke [derived from the oak].
As with all our wines, there is a healthy dose of acidity before the tannins and oak flavors draw the wine to the mid and back palate. The primary flavors are dominated by dark fruits [plum, blueberries and cassis]. There is a fair amount of grippy tannins but off set by the bright and fresh core of acidity which will help this wine age and improve over the next decade.
The first time we have ever had a stand alone Cabernet Sauvignon from our 3-Acre block or "Block 3".
If possible, decant this wine for 2-3 hours prior to serving.
