The components of this wine were picked separately during the first week of October at an average sugar level of 24.5 Brix. All fruit was hand harvested into 25-pound lug boxes before being cooled for 24 hours prior to processing.
All lots were de-stemmed without being crushed; and sorted to remove any material other than grapes. The whole berries were transferred to open top fermentation tanks, the must cooled while additions of tannin, acid and enzymes were made. The must was warmed up slowly and a selection of cultured yeasts were added once the must reached 65 degrees F.
Fermentation was completed in 17 days, with the lots receiving an additional 12 days on the skins for further tannin and color extraction. The free run juice was drawn off and run directly to barrel and the press wine was added later. Secondary fermentation was initiated by the addition of L.A.B and completed in barrel 3 months later, as measured by paper chromatography. The wines were racked off the gross lees and returned to barrel for ageing. During this period, the blend of the wine was made, with blending taking place only two weeks prior to bottling.
The wine received a very light filtration to remove any un-wanted sediment and was bottled August 28th 2020.

Deep Ruby red in color and uniform throughout the glass, showing little signs of ageing or oxidation.
The nose is intense and aromatic with more oak derived aromas initially, with pronounced smoky, charred wood and cured meat tones.
With aeration and warmth, the subdued fruit tones come to the fore with dark berries [plum, black and blue berry], with additional notes of bitter chocolate, violets and dried herbs. A compelling a complex nose that changes in the glass.
Make no mistake, this is a big wine, it is bone dry with luscious tannins and a long and lengthy finish. It has good grip, showing little astringency and the oak is well balanced with the acidity and the fruit of the wine. The palate is dominated by dark berries with secondary flavors of espresso, black tea and pencil lead or graphite.
A beautifully harmonious and balanced wine that will require a few years of ageing to truly show its pedigree. Ageing potential 10 to 15 years conservatively. We truly believe this to be the best Heritage wine was have produced thus far.
