A cross between the French-American hybrid, Joannes Sevve and the german Vitis Vinifera Gewurtztraminer, this uniquely dry style of Traminette is a delicate balance between the vibrant acidity on the palate and the floral and fruit flavors inherent within this varietal. The wine is incredibly aromatic with notes of rose petals and lychee fruit.
The Traminette grapes were harvested August 22. The fruit was cooled down for 24 hours before being whole cluster presses, with only the free run juice being used. After the juice was settled, the wine was racked off the gross solids where it could begin fermentation. Fermentation was done at a cooler temperature for 24 days, causing the yeasts to struggle and build character within the wine. The wine was racked again off the gross lees and stored in tanks without any stirring. Prior to bottling the wine was cold stabilized at 28 degrees for 2 weeks.
