The fruit for the wine comes primarily from our block 2 [planted in 2016] with the remainder from block 7 [planted in 2000], hand-picked September 22nd 2019. The fruit was chilled before being de-stemmed and sorted.
The fruit was lightly crushed and transferred to one-ton fermentation bins. The must was immediately warmed up and inoculated with several yeasts to initiate primary fermentation, which was finished in 14 days. During that time, the must was punched down 6 times daily, to extract as much color and flavor as possible.
After fermentation was completed, the free run was run off and the skins transferred to press for pressing. The light and medium press fractions were added to the free run wine and transferred to barrel.
Secondary fermentation occurred in barrel naturally and finished in April, at which point the wine was racked, sulfured and returned to barrel for ageing. Prior to bottling the wine received a very light filtration and was bottled August 28th 2020
200 cases produced.
Beautifully dark and inky in color, with no signs of sediment.
The nose is beautifully aromatic with primary tones of white pepper, Provencal herbs and violets. With additional time in the glass, aromas of cherry, spices, graphite, black tea and smoke start coming out. This wine is aromatically complex and intricate.
This Cabernet Franc is full bodied with initially lots of oak derived flavors of charred wood, clove, spice and mocha. With additional oxygenation, you get the beautiful spicy and pepper flavors associated with this varietal with secondary flavors of dark berries and chocolate.
The palate is quite grippy, the tannins are present but there is little astringency and bitterness. As big as this wine, there is a vibrancy and brightness due to good acidity levels. This is beautifully balanced and poised although a bit linear at the moment, requiring some time to fully reach its potential.
Put this away from 5 years and up to 10 or 12, we really think this could be something special.
