2019 Chardonnay Reserve

Fruit for this wine comes from a block planted in 2005 on one of the highest points on the property. The fruit was machine harvested on August 28th and immediately transferred to the press for pressing. Only 68% of the juice was recovered and used [only the free run and light press fractions used].
The juice was run to tank where we made additions of Sulfur, Acid and Tannin. The juice was cold settled without any enzyme and racked off the gross solids to tank, where primary fermentation took place. Cross Evolution yeast was added, and primary fermentation was completed in 28 days at relatively cool temperatures. After 3 days of settling, the wine was transferred to barrel and sulfured to prevent the onset of secondary fermentation.
During the maturation period, no stirring of the barrels took place, this was intentional as we wanted to conserve as much of the acidity and vibrancy of the wine as possible, versus making a wine that was heavily textured and creamy. Prior to bottling the wine was both protein and cold stabilized and sterile filtered with an additional acid addition made before being bottled July 30th, 2020
The wine has a pale straw color with perhaps a greenish tinge to it. The nose is beautifully expressive with aromas of wet stone, flint, matchstick, citrus and stone fruits, and upon aeration and warmth, you get more topical nuances and perhaps a touch of butterscotch or caramel from the oak.
The palate is lively and vibrant with a good core of acidity on the entry with flavors of red apple skin, green apple, lemon, citrus and stone fruits. The oak provides some texture and weight with the finish quite long and length, but the influence of the barrel is kept to a minimum. This wine shows more tension and vivacity than previous years and showcases a style that we will be pursuing in the future.
Immediately enjoyable but I think this will drink beautifully between 3 and 5 years after bottling. I would serve this wine slightly chilled.
