A blend of our two blocks planted on the estate, hand picked September 19th with good sugar levels and physiological ripeness. Hand picked into 25lb lug boxes before being chilled for 48 hours prior to processing.
De-stemmed and sorted with no crushing of the berries, with he must then transferred to open top tanks. The must was cooled, and fermentation delayed, allowing us to add acid, tannins, enzymes and various other additives. The must warmed and then inoculated with a cultured yeast, with primary fermentation completing in 16 days, during which the must was pumped over three times daily.
There was no additional post ferment maceration and the free run wine was separated from the skins, with the skins transferred to press. We added only the light press fraction wine to the free and after 2 days of natural settling in tank, the wine was transferred to 500L French Oak barrels for ageing.
Secondary fermentation tool place naturally in barrel and finished in April, at which time the wine was racked, sulfured and returned to barrel. No stirring took place during this time, the wine was topped every 2-3 weeks.
Prior to bottling, the wine received a very light filtration to remove the sediment and was bottled August 28th 2020.
200 cases produced.
The wine is ruby red. Intensely aromatic with rose petal, red fruits, potpourri, herbs and milk chocolate.
This wine is medium plus in body with a generous core of acidity, ample tannins that are soft and supple, creating a wine that is elegant, balanced and shows incredible restraint. There is a lovely juiciness in the mid palate, while the finish is long and lingering. The fruit and flavors of this wine are so pure, focused and savory that really gives credence to Merlot being a noble variety. This wine will offer short term enjoyment but can be laid down for a further 6- 8 years for ageing.
