Production Notes
The fruit for this wine comes from the 7 acre block, but it is the youngest Merlot rows in the block, planted in 2014.

The fruit was hand harvested September 18th and immediately transferred to cold storage. After 18 hours, the fruit was de-stemmed and sorted to remove and additional material [stems, jacks and leaves] before the whole berries were transferred to one top open fermentation bins. Additions of Sulfur, tannin, acid and enzymes were made and the must was allowed to warm up over the 4 days. The must was then inoculated with Yeast MT, isolated from the St Emilion region in Bordeaux, chosen for it’s ability promote red fruit character and enhance color.

Fermentation was at lower than normal temperatures, with the bins being punched down twice daily. Fermentation was completed in 10 days and the must was transferred to the press. Only the free run and light press factions were blended and then barrels down, secondary fermentation occurred natural in barrel and was completed in April. The wines were racked off, sulfured and then returned to barrel for maturation.

Prior to bottling, the wines received a gentle filtration and was bottled July 31st. Ageing potential of 6-8 years, immediately enjoyable but worth cellaring for a while.

Wine Description
The wine has a deep color, not quite as purple as the PV but more Ruby in appearance. The nose is profoundly expressive, with aromas of cherry, raspberry, tobacco, touch of cedar and graphite. With decanting and aeration, you get notes of bitter chocolate and violets. The palate showcases the silkiness that I love about Merlot. The tannins are soft and supple and there is good acidity which keeps this wine bright and lively, the oak is not aggressive at all, showing more restraint, balance and elegance.

The flavors are typically red spectrum but there is focus and juiciness to this wine that I hope and think people will love. This will provide immediate enjoyment but will drink better in 3-4 years onwards.

Food pairing: Roast lamb shank, Pork chops, Duck and Turkey
