The fruit for this fruit forward and approachable wine comes from our Estate Vineyard 28% and Trump Vineyards 72%. The Cabernet Sauvignon was from our 2019 Vintage and was added to give the wine some mature and oak notes.
The two blocks were harvested roughly 10 days apart and were individually managed. Both wines were sorted before being transferred to open top fermentation tanks, with primary fermentation last 12 days, 16 day total skin contact.
The wine was drained off the skins quickly as the grapes were slightly underripe. The heavy press fraction was not added, only the light and medium press wines were added. Maturation took place in 500L French oak barrels, with secondary fermentation occurring naturally in barrel, completing in early February.
The wine was then racked, returned to barrel and sufured.
Prior to bottling, the barrels were blended, and the wine was lightly filtered to remove and sediment. The wine was bottle April 5th
Pair this with hard cheeses, braised meat dishes and fatty fish dishes. Easily enjoyed on its own as well.
